Built like a torpedo and armed with razor teeth, the wahoo hits a bait at highway speed and peels line before you can react. Prized for its clean white fillets, wahoo are a welcome bonus on offshore trips, especially around structure and reef edges.

How we fish it

High-speed trolling with wire leaders and deep-diving plugs. Kept for the kitchen — some of the best eating in the ocean.
